The Tobago Hospitality and Tourism Institute (THTI) proudly participated in this year’s Tobago Blue Food Festival, showcasing a range of innovative dasheen recipes created by the talented Ms. Dianne Quashie and her class.
Dasheen, a local staple, was transformed into culinary masterpieces, such as dasheen cheesecake, dasheen chow/salsa, dasheen ponche de creme and dasheen chips capturing the attention of festival-goers and highlighting the versatility of this beloved root vegetable.


From savory dishes to delightful desserts, Ms. Quashie’s creations demonstrated the depth of flavor and creativity that THTI brings to Tobago’s culinary scene.
