This beginner-friendly course introduces students to the fundamentals of cake baking and decorating. Participants will learn how to prepare a classic sponge cake from scratch, create frostings, pipe decorative designs, and assemble and decorate cakes using a variety of techniques.

You are required to pay 100% of the total cost at least seven (7) working days prior to commencing of training. If you are unable to pay the full amount before the start of classes, you have the option of making 50% down payment and the balance payable by the middle of the programme.

Persons that choose to make payments via the bank account: the receipt must be emailed or Whatsapp to 477-8910 one (1) week before commencing of training.

Should THTI cancel a scheduled class before its commencement, THTI will refund 100% of the course fee. 

Should an applicant having paid all the required fees withdraw before the start of a scheduled class (having not attended any classes) a 10% penalty fee will be charged.

Should an applicant having paid all the required fees withdraw after the start of a scheduled class (having attended at least one (1) class) a 20% penalty fee will be charged.

No refund is applicable should an applicant having paid all the required fees withdraw after attending two (2) or more than two (2) classes

Should an applicant having paid part of the required fees withdraw before the start of a scheduled class (having not attended any classes) a 10% penalty fee will be charged.

Should an applicant having paid part of the required fees withdraw after the start of a scheduled class (having attended at least one (1) class) a 50% penalty fee will be charged.

No Refund is applicable should an applicant having paid part of the required fees withdraw after attending two(2) or more than two (2) classes.

Applicants in cases 2 and 3 will be given the option to transfer to another course or the same course being offered at another date.

Course Description:

DESCRIPTION

This beginner-friendly course introduces students to the fundamentals of cake baking and decorating. Participants will learn how to prepare a classic sponge cake from scratch, create frostings, pipe decorative designs, and assemble and decorate cakes using a variety of techniques. Emphasis is placed on building practical skills, understanding common cake faults, and developing creativity in cake presentation. 

COURSE OBJECTIVES 

By the end of this course, students will be able to: 

  • Bake a classic sponge cake using proper techniques 
  • Prepare and apply American buttercream frosting 
  • Demonstrate basic and intermediate piping skills 
  • Create buttercream flowers and decorative elements 
  • Level, fill, stack, and frost cakes professionally 
  • Apply decorative finishes including drip effects and themed designs 
  • Identify and correct common cake faults 

MODULES

Week 1: Introduction to Buttercream and Basic Piping Skills

  • Preparation of American buttercream frosting
  • Making paper cones (cornets)
  • Introduction to piping techniques:
    • Basic borders
    • Simple floral designs
  • Colouring and flavouring buttercream

Week 2: Buttercream Flowers & Foliage

  • Techniques for piping buttercream flowers
  • Creating leaves and foliage
  • Arranging floral designs on a cake board

Week 3: Sponge Cake Baking Fundamentals

  • Introduction to cake mixing methods
  • Preparing and baking sponge cakes from scratch
  • Cake-making dos and don’ts
  • Identifying and correcting cake faults
  • Preparing cake fillings

Week 4: Cake Assembly & Finishing Techniques

  • Cake levelling techniques
  • Filling and stacking cakes
  • Crumb coating and final frosting
  • Applying a cake drip
  • Decorating using previously learned piping skills

Week 5: Cupcake Florals & Wafer Paper Techniques

  • Introduction to wafer paper techniques
  • Creating decorative wafer paper elements
  • Designing a floral-themed pull-apart cupcake arrangement

Week 6: Final Project – Themed Cake Decoration

  • Planning a themed cake design
  • Decorating a full cake using:
    • Buttercream techniques
    • Floral piping
    • Drip and finishing techniques
